One farm, one lot. Hand-picked, washed, and dried in the shade.
The cherries are hand-picked at Living Hope and dried in the shade rather than in open sun. Shade drying is slower and more work, and it is the reason the sugars and the aroma survive the trip.
Washing strips the fruit off the seed early, which is why this one comes through the cleanest of the two.

Grown at over 4,200 feet on the slopes of Mount Elgon.
Grown in Bududa, on the slopes of Mount Elgon in eastern Uganda, over 4,200 feet up. Altitude slows the cherry down, and a slower cherry concentrates what ends up in the cup.

How it gets from the branch to your kitchen
Picked ripe
By hand, cherry by cherry, along the branch. The rest are left to come on.
Depulped and washed
The fruit is stripped off the seed early. That is why the Zambia comes through so clean.
Dried in the shade
Slower than open sun, and more work. It is the reason the sugars and the aroma survive the trip.
Rested and shipped
Hulled, rested, then shipped green so nothing has started ageing before it reaches the roaster.

Light
Roasted brightest. The most origin character in the cup.
Medium
The everyday middle. Balanced, round, dependable.
Dark
Longer in the roaster. Deep, bittersweet, heavy.
Espresso
A medium-dark roast built to hold up under pressure.
